<p>Phenols and oligosaccharides are extracted from plant tissues or products obtained from them, by treatment with a polar organic solvent which is an alcohol, ketone or ester together with an aqueous electrolyte solution of acidic nature, chosen from organic and mineral acids and acid salts of these. Also protein concentrates for foodstuffs have a low phenol and oligosaccharide content. Process gives a very pure, completely soluble, protein which is white to creamy white.</p> |
