摘要 PURPOSE:To obtain a flour of good quality used in frying, by making barley, rye, etc. into a fluid slurry under heat and pressure, extruding the slurry from orifices, expanding the slurry in vacuum, pulverizing the expanded strand material, and mixing the resultant flour with wheat fluor. CONSTITUTION:Barley, rye or processed grains thereof are heated at 180 deg.C under pressure to give a fluid slurry, which is then extruded from an extruding die with orifices under ordinary pressure. The resultant expanded and gelatinized strand material is then pulverized and mixed with wheat flour at a weight ratio between the processed flour and the wheat flour of 20-30%.
