PURPOSE:The product of the lactic fermentation of unpolished rice including alpha- form starch is used as a food or beverage to produce a foot or beverage product with high nutrition, good flavor and taste. CONSTITUTION:Unpolished rice is made into the alpha-form in the starch and the lactic fermentation is conducted by inoculating a lactic bacterium to an aqueous medium mainly containing the product. The fermentation mixture is used as food or beverage. Further, unpolished rice treated with an amylase or cellulase also may be employed in addition thereto. |
