PURPOSE:Fat is solublized in an aqueous phase containing protein and saccharide to produce a fat-containing food product that has heat and storage stabilities and is miscible with other flavors in any proportion. CONSTITUTION:An edible fat is solubilized in an aqueous phase containing more than 0.005wt% of protein and more than 35wt% of water-soluble saccharide in concentration. Further, when necessary, the resultant solution is combined with a flavor such as processed fruit, coffee, almond paste, peanut paste, cacao mass or cocoa powder. |
