PURPOSE:To prepare fish-paste product like shrimp meat, giving the feeding of shrimp meat to the teeth and the palate, by compounding the raw material of fish- paste product with edible fibers having the shape of waste thread and three-dimensional network structure, and coagulating the mixture with heat. CONSTITUTION:Ground fish-paste is mixed with one or more additives selected from salt, seasonings, starch and modifiers, ground, and if necessary, imparted with the taste and flavor of shrimp meat. One pt.wt. of the paste mixture thus obtained is mixed with >=0.2pts.wt. pref. 0.2-2.5pts.wt. of edible fibers having the shape of waste thread and three-dimensional network structure obtained by the forming of a mixture of polysaccharides, animal proteins, vegetable proteins, vegetable fibers, etc., and the mixture is kneaded, if necessary formed to the shape of a shrimp, colored, and coagulated by steaming or boiling. |
