PURPOSE:To prepare a grated ''wasabi'' having enriched pungent taste capable of retaining the pungent taste immediately after the grating of the raw ''wasabi'' for a long term, by finely cutting a frozen natural raw ''wasabi'' at a temperature of 0 deg.C or below, and adding a pungent taste retaining agent thereto. CONSTITUTION:A natural raw ''wasabi'' is frozen at the freezing temperature thereof or below and finely cut by a means such as grating with a grater, etc. at a temperature of 0 deg.C or below. The resultant finely cut or grated ''wasabi'' is then mixed with one or two or more substances selected from the group consisting of cyclodextrin, an essential oil, a fat or oil, e.g. soybean oil, rapeseed oil, mustard seed oil, etc. and mustard oil, e.g. allyl mustard oil, and stored at 0 deg.C or below or ordinary temperature. |
