PURPOSE:To maintain a natural spice without damaging the flavor and fibrous substances immediately after the grating thereof, by grating the natural spice containing the fibrous substaces at 0 deg.C or below without freezing, and storing the grated natural spice at a temperature of 0 deg.C or below. CONSTITUTION:A natural spice, e.g. a natural raw wasabi such as ''sawa wasabi'' (Japanese horseradish), horseradish (Cochlearia armoracia L.) or ''hata wasabi'' (Eutrema wasabi) cultivated in plowed fields, a ginger, gralic or onion, containing fibrous substances is fully washed with water, grated at a temperature of 0 deg.C or below, preferably about 0 deg.C, without freezing and then stored at a temperature of 0 deg.C or below. |
