PURPOSE:To prepare sterilized salad having excellent palatability, by the heat sterilization of salad mixed with powdery agaragar, gelatin, etc. CONSTITUTION:Salad raw materials such as vegetables, fruits, boiled eggs, etc. are mixed with dressing such as mayonnaise and subsidiary additives such as sugar, salt, etc. Powder of a material which melts by heating and coagulates by cooling, e.g. gelatin, agaragar, etc., is added to the mixture, and the whole composition is sealed in a container and heat sterilized at 90-120 deg.C for 20-40min. The amount of the powdery material in the whole raw materials is 0.05-1.2% in case of agaragar, and 0.4-2% in case of gelatin. |
