PURPOSE:To obtain the titled enriched rice and enriched cleaned barley having improved nutritive value without emitting the rice branny smell on cooking the rice and cleaned barley, by adding a vitamin B1 salt and cyclodextrin to a rice or cleaned barley. CONSTITUTION:A solution containing a salt, e.g. hydrochloride, nitrate, cetylsulfate, rhodanate, phenolphthalinate or laurylsulfate, of vitamin B1 and cyclodextrin (any of the alpha, beta or gamma-cyclodextrin) in an amount of about 6-10pts.wt. based on one pt.wt. salt is prepared. A rice or barley is immersed in the resultant solution or coated with the solution to contain the vitamin B1 salt and cyclodextrin in the rice of cleaned barley. Thus, the aimed vitamin B1-enriched rice or cleaned barley is obtained. |
