Recovery of betaine from natural sources, such as beet molasses, residual molasses and vinassse, by diluting the molasses to a dry substance content of 25-50%, introducing the diluted molasses into the top of a chromatographic column containing a salt of a polystyrene sulphonate cation exchange resin which is crosslinked with from about 2 to about 12% by weight of divinylbenzene, eluting with water and collecting a fraction of betaine from the downstream end of the resin. Then the batches of molasses are supplied consecutively at predetermined intervals, the supplies of molasses can be partially overlapped. The betaine from the previous supply of molasses is then eluted by the diluted molasses from the subsequent supply. The betaine fraction is evaporated in vacuo and the betaine is crystallized as anhydrous crystals or as betaine monohydrate.
