PURPOSE:Roughly crushed food such as cheese is added to a seasoned, finely crushed and kneaded paste of raw cuttlefish and roughly mixed and they are formed, dried and baked to give said food for accompaniment of ''sake'' drinking with sophisticated tastes. CONSTITUTION:The internal organs and soft bones are removed from raw cattlefish and the flesh is washed and drained. When necessary, the flesh is peeled off using warm water of about 50-60 deg.C. The resulting flesh is seasoned in seasoning solution, finely crushed and keanded together with water into paste. The paste may be produced from unseasoned flesh. In the meantime, cheese, peanuts and others are roughly crushed into several millimeter - 1 centimeter sizes and both of them are mixed so that the roughly crushed food is not destructed to such an extent that both of them does not homogeneously disperse in each other. The amount of the roughly crushd food is such one that the crushed food can give its characteristic taste and texture, that is, roughly 20-70wt%. Then, the resulting mixture is spread by pressing to a uniform thickness, dried at about 35-40 deg.C for 12-17hr and the surface is baked at about 180 deg.C for 3-4min. After cooled, it is cut into pieces with appropriate sizes and packed to give the final products. |
