PURPOSE:To prepare orange fruits jam having a unique texture, clear orange color and excellent taste and flavor, and containing the original shape of the flesh, by heating the fresh of orange fruits in a concentrated sugar solution containing a low- methoxyl pectin. CONSTITUTION:Fruits of oranges such as tangerine, summer orange, navel orange, etc., are immersed in hot water in conventional way, pared, and separated into segments. The flesh obtained by skinning the segment is immersed in a concentrated sugar solution containing sugars and a low-methoxyl pectin, and heated at 70-90 deg.C, pref. 80-85 deg.C for 2-4hr., pref. 3-4hr., to obtain preserved flesh. A concentrated fruit juice prepared from fruit juice, sugars, pection, and an organic acid, is added to the preserved flesh obtained above, and gelled by boiling. |
