<p>Six-grain bread consists, w.r.t. total dough, of 5-10% oats, 3-10% maize. 3-10% sesame, 3-10% barley, 3-10% wheat grist, 5-10% rye grist, 1-6% linseed, 1-8% millet, 0.5-2% spice, 25-35% water, 5-15% rye flour, 5-27% 5-27% wheat flour, 0.5-3% baking assistants, 0.5-1% salt and 1-3% yeast. The bread obtd. is nutritious, porous and can be baked thoroughly, can be stored and frozen, and cut both fresh and after prolonged storage. The bread can be coated with spread, does not crumble and has a pleasant taste compatible with butter, cheese, sausage, fish and sweet foods.</p> |
