PURPOSE:To provide a product having crude drug effects and unique flavor, by boiling lotus pips, treating the pips with warm water containing dissolved sodium bicarbonate, washing the pips with water and dipping the washed pips in water containing dissolved burnt alum, repeating the above-mentioned steps and processing the pips into 'AMANATTO' (sweetened beans). CONSTITUTION:Water is sufficiently placed in a suitable container and dried lotus pips are charged thereinto and boiled to about 100 deg.C temperature. The resultant softened lotus pips are then dipped in 1l warm water containing, e.g. 5-6g sodium bicarbonate dissolved therein, for about 30min. The dipped lotus pips are subsequently washed with water, dipped in 1l water containing, e.g. about 5-10g burnt alum dissolved therein, for about 30min and then rewashed with water. The steps of treatment with warm water containing the dissolved sodium bicarbonate washing with water dipping in water containing the dissolved burnt alum are repeatedly carried out according to the hardness or softness and water absorbing capacity of the lotus pips. After the respective pips are softened in a state without collapsing the shape, the pips are processed into 'AMANATTO'.
