发明名称 MATERIAL FOR CONCENTRATED PROTEIN FOOD
摘要 PURPOSE:To obtain advantageously a material for concentrated protein food having extremely improved water rtention, providing texture structure having processing suitability to a processed food like that of animal meat, by defatting and dehydrating meat of marine animals under specific conditions. CONSTITUTION:Meat of fishes (e.g., walleye pollack, krill, etc.) especially being caught in large quantities, having a low fat content, is subjected to preliminary treatment, e.g., mincing treatment, etc. The preliminarily treated raw material meat is blended with a salt e.g., table salt, converted, into a pasty meat state, and adjust- ed to pH 6.5-7.7. The raw material meat after the treatment is dehydrated and defatted by using a hydrophilic organic solvent, ethanol, etc. as short a time as possible and simultaneously agglomerated. The agglomerated protein is then pressed and filtered, and subjected to air flow drying at a low temperature below room temperature so that water content is made not more than 25wt%, to give the desired material for concentrated protein food. This food material has a protein content not less than 75wt%, preferably not less than 85wt%, a water retention about three to five times its weight and a texture structure wherein muscular fibers are bundled by the agglomerated protein irregularly.
