PURPOSE:To prevent the deterioration of the taste of a rice cake, by freezing the fresh pounded rice cake rapidly before the evaporation of water contained in the cake, and storing the frozen rice cake at <=0 deg.C. CONSTITUTION:A fresh pounded rice cake, if necessary wrapped quickly with a vinyl bag, etc., is put into a freezer, and frozen rapidly. The frozen rice cake is stored in a freezer at <=0 deg.C, in an atmosphere at <=0 deg.C, or in a heat-insulated space which can be maintained at <=0 deg.C for some time interval. |
