PURPOSE:To separate stevioside and rebaudioside A, in high purity and yield, by crystallization taking advantage of the solubility difference of both compounds in an aqueous solution of ethanol. CONSTITUTION:A mixture of stevioside and rebaudioside A extracted from the leaves and stalks of Stevia rebaudiane Bertoni by conventional process, is dissolved in a >=70% aqueous solution of ethanol, and rebaudioside A is selectively crystallized from the solution. |
