PURPOSE:To prevent the adhesion of bacteria occurring from the outside or a device which may be attached by foods and propagation of bacteria, by washing the device for preparing or processing foods, or a machine for transporting foods with high- pressure aerated carbonated water, followed by maintaining it in an atmosphere of carbon dioxide. CONSTITUTION:A device for preparing or processing foods, or a machine for transporting foods, e.g., conveyor, is washed with high-pressure aerated carbonated water, the part of the washed device or the transporting machine where the foods are transferred is covered with a portable type isolating hood, single gas of carbon dioxide or a mixed gas of carbon dioxide and ethanol or a mixed gas of carbon dioxide, ethanol and nitrogen is jetted into the food so that it is maintained in the atmosphere of the jetted gas. |
