<p>In a process for the prodn. of fermented drinks such as beer, wine, champagne, etc., with a reduced alcohol content, the ready-fermented drink made by normal fermentation techniques is passed over a dialysis membrane at a press. difference of less than 0.5 bar. The dialysis fluid on the other side of the membrane, contg. the extract substances, is an alcohol-free fruit drink or an already-fermented drink which has been freed from alcohol. Pref. dialysate fluids are unsweetened fruit drinks or a liquor made by dialysis of a fermented drink. The dialysate liquor may be carbonated. Pref. the dialysate liquor is circulated and the dialysed alcohol is recovered from the dialysate liquor by vacuum distn. Process is economical to operate and does not cause deleterious change in flavour of the drink, as with some prior art processes. The low-alcohol drinks are useful e.g. for drivers, diabetics, etc.</p> |
