Prodn. of a vitamin concentrate for nutritional purposes is by autolysis of an initial raw material, and sepn. and concn. of the autolysate, there is used as the initial raw material a by product of dry wine prodn. obtained after separating off the young wine and consisting of a residue of the original yeast strains which is highly tolerant to the elevated concns. of alcohol formed as a result of fermentation and to grape must pH values below 3-5. After separation from wine residues, the raw material is subjected to autolysis by pressing followed by 1.5 to 3.0-fold dilution, then the autolysate is heated to 80-90 deg.C, cooled to 0-2 deg.C, separated from the precipitate, and concentrated to the required concn. Prodn. of a vitamin concentrate contg. B-group vitamins, amino acids and trace elements suitable for use as a food additive. The concentrate can also be used on its own for oral treatment and prophylaxis of vitamin B deficiencies, e.g. after abdominal operations when residue-free nutrients are needed. The concentrate can also be used in agriculture as a fertilizer. The process uses an industrial by product readily obtainable on a large scale. |
