PURPOSE:To prepare a sauce having unique taste and flavor, by adding powdery dried bonito to sauce obtained by conventional process, and heating, stirring, and filtering the mixture. CONSTITUTION:Powdery dried bonito is added to Worcestershire sauce, and the mixture is stirred for 20-30min under heating at 80-90 deg.C. After the treatment, the powdery dried bonito is removed from the mixture by filtration to obtain the objective sauce. |
