PURPOSE:To prepare a ''tempura'' having uniform water distribution and excellent appearance, and useful as an ingredient for instant noodles, by frying a food coated with the first coating, and again frying the fried food after coating at least one side thereof with the second coating. CONSTITUTION:A heat-forming cavity dripped or coated with an oil, is filled with the first coating material optionally containing raw foods, and while the upper face of the coating material is still fluid, hot oil is showered to the upper face to obtain a fried food. The fried food is transferred upside-down to the second heat forming cavity having the same diameter to the former one; the second coating material optionally containing raw foods is applied to at least the upper face of the fried food; and hot oil is showered to the upper face thereof. If necessary, the fried food is immersed in hot oil after either or each of the showering processes. |
