PURPOSE:To prepare rapidly cookable packed rice having high preservability and giving cooked rice having similar springiness and gloss to the one obtained by the cooking of raw rice, by coating raw rice grains with pasty liquid, packing and sealing in a container, and sterilizing with heat. CONSTITUTION:Raw rice grains are if necessary washed with water, and coated with a pasty liquid obtained, e.g. by dispersing starch, processed starch, rice flour, etc. in water followed by gelatinization with heat, or by dispersing gum, etc. in water. The coated rice grains are packed and sealed in a heat-resistant container and sterilized by heating at >=100 deg.C to obtain the objective rapidly cookable packed rice having a water content of about 38-47%. |
