PURPOSE:The titled juice pressed from a bitter orange, capable of rounding the taste of meat and promoting the apetite, and prepared by introducing cider vinegar, a sea tangle and a Guinea pepper in a container, allowing them to stand for several hours, adding soy sauce to them, stirring and removing only the sea tangle, adding wine and lemon juice to the remaining mixture, and allowing them to stand for several hours. CONSTITUTION:For example, 58l soy sauce, 20l lemon juice, 20l cider vinegar, 2l wine (for drinking), 500g sea tangle, 1,000g Guinea pepper are prepared. The cider vinegar, sea tangle and Guinea pepper are introduced into a container, and allowed to stand for about 3hr. The soy sauce is then added, and the mixture is stirred. The sea tangle is then scooped with a net and taken out of the container. The wine and lemon juice are introduced into the container and allowed to stand for about 3hr to give the aimed juice pressed from a bitter orange suitable for cooking in Western style, e.g. roasted meat. The juice is sudachi (citron) together with the lemon juice added may improve the flavor of the product. |
