发明名称 PREPARATION OF ALPHAASTARCH
摘要 PURPOSE:To obtain alpha-starch of stable quality capable of facilitating the food processing at a low cost, by heating a powdered raw material for starch, drying the heated material to complete the gelatinization, and granulating the material under heating and stirring while pouring water thereto. CONSTITUTION:A powdered raw material consisting of powder, e.g.. rice flour, refined sugar or starch as a main constituent, is heated under stirring without addition of water at 110-115 deg.C for 40-50min to remove water and dried to a moisture content of 6-7%. Thus, the gelatinization is completed. The heating temperature of 120 deg.C or above scorches the material, and the temperature of 110 deg.C or below makes the heating incomplete and causes no gelatinization. The resultant fine alpha-starch particles dehydrated to a moisture content of 6-7% are sprayed with 10-15% water from a spray gum under high speed stirring at 110-115 deg.C at a pressure of about 3-5kg/cm<2>, and the dehydrated alpha-starch particles absorb water, shrink and combine to give granular alpha-starch having about 0.2-0.5mm. diameter.
