PURPOSE:Pasty sesami is solidified without using an emulsifier and processed, thus preventing the separation of the oil component from the sticky sesami. CONSTITUTION:Roasted sesami is ground together with its skins to form pastelike sticky sesami. An appropriate amount of water is added to the sesami and they are sufficiently mixed by stirring. The mixture is heated up to a level of 90-100 deg.C and cooled under standing. When the mixture is cooled to room temperature, the objective solid sticky sesami is obtained. The solid sticky sesami can be restored to the original paste by stirring. |
