PURPOSE:To prepare dried shiitake mushrooms, instantly usable and storable for a long term without degrading the taste and flavor thereof, by cutting down the hard tips of dried shiitake mushroom stems which are washed with water, enclosing the shiitake mushrooms with water in a heat-resistant bag, and sterilizing the shiitake mushrooms at a high temperature to save the time for reconstitution with water. CONSTITUTION:Dried shiitake mushrooms 1 are washed with water, and the hard tips of the shiitake mushroom stems are cut down. 15g dried shiitake mushrooms thus prepared are immersed in 100ml water 2, contained in a heat-resistant bag 3, heat-sealed at a part 4 and boiled in a heat-resistant and sterilizing cooker at 90 deg.C for 30min. The heat-resistant bag 3 is immediately cooled in cooling water at 10 deg.C or below and shrunk to complete the preparation of the aimed dried shiitake mushrooms. The soft dried shiitake mushrooms absorbed all the components and a soup stock are instantly usable, and the preliminary arrangement of cooking can be simplified. Thus, the dried shiitake mushrooms rich in nutritive subtances can be obtained through all seansons. |
