The invention relates to a device for automatically regulating the grain size of coffee powder in coffee machine grinders, in the case of which regulation of the grain size of the ground powder is carried out automatically and immediately when the drink is prepared, on the basis of an optimum infusion time. The device is composed of the following parts: a reducing gear system with an output shaft which executes a revolution in a fixed period serving as a rated period and is connected to at least two cam plates which are coaxially arranged with a gear wheel which is connected to a screw for regulating the distance between the rollers of the grinder, the two plates interacting with a catch so that they can be lifted up from the gear wheel or made to engage with the latter and so that when a device emits a pulse, which is related to the effective delivery time of the drink, in order to actuate both catches, one plate is made to engage with the gear wheel or both plates are raised up from it, to make the effective drink delivery period different from or slightly shorter than the rated period in which the two cam plates execute a single revolution.
