PURPOSE:To obtain a long-period stable emulsified fat and oil composition of water-in-oil type having excellent high-temperature resistance free from water oozing, oil-off and reduction in shape retention, by blending and emulsifying an edible fat and oil composition containing a specific amount of a diglyceride and a specific amount of lecithin into water, etc. CONSTITUTION:1pt.wt. edible fat and oil composition containing >=20wt.%, preferably 30-99.5wt.% one or more diglyceride and >=0.1wt.%, preferably 0.5-20wt.% lecithin is blended and emulsified into preferably 0.25-9pts.wt. water, etc., to give a water-in-oil type fat and oil composition. |
