PURPOSE:To give mild and delicate sweetness and refreshing aftertaste to a food added with a sweentener, e.g. cakes, drinks, etc., by dispersing and dissolving a hydrolyzed animal protein (HAP) to the food at a proper stage in the preparation process. CONSTITUTION:HAP prepared from gelatin, fishmeal, skimmed milk, stickwater, egg white, etc. is added to a cake, drink, etc. sweentened with sugar or sugar and one or more components selected from saccharides other than sugar, sugar alcoholes, amino acids, peptides, proteins, and artificial sweeteners, at a proper stage in the preparation process. The amount of the HAP is about 0.01-0.4% to the cake, etc. |
