PURPOSE:An oil emulsion including glucose is fermented with a bread yeast and made into a powder to produce a fat-containing powdered food of high oxidation resistance with a good fermentation smell imparted. CONSTITUTION:Glucose is added to an oil emulsion by 5-10% based on the powdered product to be obtained and the mixture is fermented with a bread yeast. Then, the fermentation mixture is spray dried into a powder. |
