PURPOSE:To obtain the titled seasoning having moderate acid taste, etc., and plasticity, usable in the same manner as mayonnaise, etc., and giving light feeling to the palate, by foaming an O/W-type or a W/O/W-type emulsion containing a seasoning component other than sweetener in a refrigeration temperature range. CONSTITUTION:An O/W-type or a W/O/W-type emulsion containing a seasoning component other than sweetener as essential taste component is foamed in a refrigeration temperature range to obtain the objective seasoning. Preferably, the emulsion contains lactoalbumin as a protein component and further contains a protein component treated with an enzyme and the frothed product is filled in a container in frozen state. |
