PURPOSE:Suspended dregs are coagulated and precipitated by the use of a precipitant and a protein coagulant to permit easy separation into the liquid part and the solid part and to produce soysauce with excellent taste and color in high efficiency. CONSTITUTION:A precipitant harmless from the view point of food sanitation such as a sand or kieselguhr is added to a heated sediment, a by-product in the production of soysauce, and additionally a protein coagulant such as tannic acid is added thereto under stirring to coagulate and precipitate the suspended dregs, whereby soysauce is recovered as the supernatant. |
