PURPOSE:To obtain a product having good recovery and texture, by immersing a milled glutinous rice in to water, steam-boiling the rice and subjecting the boiled rice to primary drying and grinding and subjecting the treated rice to secondary drying so as to keep low water content. CONSTITUTION:A raw material rice is immersed according to a conventionally method and preferably steam-boiled under pressure to pregelatinize the rice. Then the pregelatinized rice is preferably dried to 20-30% water content under reduced pressure. The dried rice in the block state is crushed and pressed to about 0.5-1.0mm thickness by a roller pressing equipment and then subjected to secondary drying with hot wind, etc., so as to retaining water content to <=8%, preferably <=about 5%. |
