发明名称 PREPARATION OF VINEGARED RICE
摘要 PURPOSE:To prepare vinegared rice having harmonized taste of vinegar and rice, and giving palatable ''sushi'', in high efficiency by placing cooked rice splashed with assorted vinegar on a perforated plate to a proper thickness, and passing cool air forcibly through the layer of the vinegared rice. CONSTITUTION:A perforated plate 8 is inserted between the rice chamber 3a of the cooling part 3 and the cooling chute 7. The cooling part 3 is furnished with a lid 6, and the cooling chute 7 is connected with a suction device 11 through the suction duct 9 and the suction hole 9a. The cooked rice is splashed with a proper amount of assorted vinegar uniformly while the rice is still hot, and the hot vinegared rice A is placed on the perforation plate 8 in the chamber 3a. After closing the chamber 3a with the lid 6, the suction divice 11 is put in motion. The air sucked through the fresh-air intake 15a is cleaned with the cooling air cleaner 12, introduced to the chamber 3a of the cooling part 3 through the air path 3b, passed through the layer of the vinegared rice A, and exhausted through the chute 7, the duct 9, etc. The vinegared rice A is cooled effectively by this process to obtain high-quality ''sushi'' rice.
