<p>The arrangement is intended for producing a pre-sliced gateau (1) or the like consisting of layers built up in a round baking tin. The gateau is deep-frozen and thereafter cut into slices by pressing a cutting head (7-9) through it which has a cylindrical (8) and radial cutters (7) such that is produces a cylindrical centre piece surrounded by a number of sector-shaped slices. It is then taken out of the tin and decorated after which it is returned to deep-freeze temperature storage and held at that temp. until it reaches its final distination. Used for prepn. of pre-sliced deep-frozen gateaux for distribution to points of sale. This procedure avoids cutting after un-freezing at point of sale, which is labour-intensive, often leads to unhygienic manual contact, produces un-equally sized slices and waste through crumbling of centre, and collapsing of pointed slice ends when served. Manually cutting in frozen form is practically impossible, and radialy cutters meeting at the centre make the central portion unfit for serving.</p> |
