PURPOSE:To prepare frozen noodles resistant to deterioration of the taste during freeze storage, and capable of being thawed in a short time, by freezing boiled noodles coated with edible oil. CONSTITUTION:Boiled noodles are seasoned or flavored if necessary, smeared with >=2wt% of edible oil, and frozen in bulk. The frozen noodles thus prepared are pref. thawed by heating with an electronic oven. |
