PURPOSE:To reduce the sourness from the flesh of an ume with an apple and make the flesh into a health food having good flavor and taste, by crushing the flesh of the pickled ume and an apple, mixing them with a gelling agent into a ketchup state. CONSTITUTION:The flesh of a pickled ume and an apple without a seed are separately crushed and mixed at a weight ratio between the flesh of the ume and the apple of about 4:6. The mixture is then incorporated with a gelling agent, e.g. a gelling agent for a ketchup, heat-treated and packed. The resultant material is applied to bread or used for a vegetable or meat dish like a ketchup. The citric acid contained therein is good for health and useful for the digestion of glucides and proteins. |
