PURPOSE:An economical composition to improve the quality of a starch food, to be stored and handled readily, obtained by blending a composition prepared by mixing a high-purity glycerol fatty acid monoester composition with a specific organic compound with fats and oils, followed by melting the blend and powdering. CONSTITUTION:An emulsifying agent composition to improve the quality of a starch-containing food by its addition to the food, obtained by blending a high- purity fatty acid monoester comprising 65-85wt% glycerol fatty acid monoester and 35-15wt% glycerol unsaturated fatty acid monoester, having an iodine value 10-40, with not more than 5wt% based on the composition one or more selected from the group consisting of an alcohol (e.g., prolylene glycol, etc.), an organic acid (e.g., citric acid, etc.), a lecithin (e.g., soybean lecithin, etc.) and a stearyllactate (e.g., sodium stearyllactate, etc.), mixing 20-5wt% fats and oils (e.g., beef tallow, etc.) having a melting point not lower than 45 deg.C with 80-95wt% of the prepared composition, melting the blend, powdering, followed by heat-treating the powdered composition in a temperature range from 45 deg.C to a temperature not melting the composition. |
