A dried meat product based on spiced meat cut into pieces having a fat content of 20% by weight or less, which is obtained by simmering the meat in a mould under vacuum and maturing the moulded product under controlled drying conditions, the product having the appearance of an uncooked dried meat. When cut into thin slices, the product is suitable, in particular, as a dietary food or for eating while travelling.
