PURPOSE:To store fishes in a raw state for a long time, by attaching a mixture of miso (fermented soybean paste) containing a large amount of Japanese papper to fishes with their organs and water removed, followed by sealing up them in a transparent, moisture-proof and water-resistant bag. CONSTITUTION:Internal organs and water are removed from fishes such as a char fish, a kind of trout (Oncorhynchus masou), a sweet fish, etc., a mixture of miso blended with 3-5wt% Japanese pepper, and, if necessary, a proper amount of a sweet sake, sugar, etc. is attached to the interior or the surface of the fishes, which are put in a transparent, moisture-proof, and water-resistant bag, e.g., polythylene, preventing the transmission of oxygen and sealed up. |
