PURPOSE:To prepare powdery roux having improved dispersion properties in milk and good flavor, by adding water to pasty roux to give a dispersion, followed by spray drying. CONSTITUTION:1-3pts.wt. wheat flour or drawn wheat flour is fried with 1pts.wt. edible oil at 120-130 deg.C for several minutes to prepare pasty or viscous roux, to which an equal amount or more water is added to disperse it, and the prepared dispersion is subjected to spray drying conventionally. |
