A lyophilised inoculation material, which disperses well, for producing a mould lawn on foodstuffs is achieved by adding to the inoculation material a substance which forms a protective colloid for the spores and hyphae and which, when the inoculation solution is made up, ensures fine dispersion of the spores. Dispersants which can be added are moderately and highly polymeric carbohydrates, proteins and protein-containing products or synthetic or semisynthetic substances with a dispersing action. |
