<p>A machine for extracting and trimming moulded creamed cheeses prepared in open-topped moulds and compressed by a floating flanged ram has two complementary parts. In the first part, the moulds are loaded sequentially on to a conveyor above which pairs of rails engage the upper flange of the ram to rock the fam from side to side, breaking contact with the cheese surface, before lifting the ram clear of the mould while the latter held down by ancillary rails. The moulds are automatically transferred to the second part of the machine where reciprocating suckers lift the cheese out of the moulds and support the cheeses while a residual meniscus is trimmed off by a rotary knife. The trimmings are removed by a conveyor having gaps through which the suckers can reach down to the moulds and raise the cheeses before the conveyor surface steps into position to collect the parings. Reduces the amount of manual work traditionally involved in preparing Saint Paulin or similar cheeses moulded in a cloth cover. Removes the residual meniscus generated at the mould/ram interface.</p> |
