<p>PURPOSE:A bacterium producing alpha-1, 6-glucosidase, belonging to Bacillus, is cultured in a medium containing iron ion, thus producing title enzyme useful for producing maltose with industrial advantage. CONSTITUTION:A bacterium producing alpha-1, 6-glucosidase, which belongs to Bacillus, e.g., Bacillus cereus varietus mycoides FERM-P No.2391, is cultured in an enriched medium containing iron salt usually by about 1X10<5>-1X10<-3>M and being adjusted in pH to 6-8. The iron salt added is an inorganic salt as chloride or sulfate or organic acid salt as citrate, fumarate or lactate and the iron ion may be either ferric or ferrous. The addition of the iron salt remarkably increases the production of alpha-1, 6-glucosidase.</p> |
