PURPOSE:To prepare the titled food material useful as a marine paste food substitute, raw material for soybean milk, etc., by powdering heated spherical soybeans after soaking in water to give suspension, followed by collecting protein-containing solid finely divided particles from the suspension. CONSTITUTION:After being soaked in water, spherical soybeans are heated at 80-200 deg.C for 30sec-30min, cooled, and pulverized in water in an amount twice to five times as much as that of the soybeans in such a way that they have 80+ or -10wt% particles with particle diameters not more than 350mu, to give suspension. Since the suspension comprises a coarse particle division with particle diameters 500-100mu consisting essentially of a fibrous material called okara [bean-curd (tofu) refuse], a protein-containing water-insoluble division consisting essentially of solid particles with particle diameters 50-3mu, and a water-soluble division containing particles of fats and oils and glycoprotein, the protein-containing water-insoluble division consisting essentially of solid particles with particle diameters 50-3mu is collected to give a food material consisting of protein as a main ingredient. |
