PURPOSE:To obtain the titled cream, satisfying viscosity, whipping time, overrun, shape holding property, syneresis, etc., by blending a fat and oil with protein and alkaline metal citrate in a specific proportion and further containing an acidic substance and emulsifying agent and having a specific acidic pH. CONSTITUTION:The aimed cream, containing 20-42% fat and oil (e.g. soybean oil), 2-10% protein (e.g. milk protein or egg white), 0.05-2.5% alkaline metal citrate (e.g. sodium citrate), an acidic substance (e.g. lactic acid) and an emulsifying agent [preferably one or more of polyglycerol ester of a fatty acid, soybean lecithin having enhanced O/W type emulsifiablity and sucrose ester of a fatty acid with a high content of monoester (with >=80% monoester content)] and having pH 3.5-5.5. |
