PURPOSE:To prepare a high quality crab paste food free of dark color and bitter taste, in a short boiling time, by removing the excessive liquid from sufficiently boiled crab paste, by filtration. CONSTITUTION:Fresh pancreas and liver extracted from the inner side of a carapace of a crab such as ''zuwai-gani'' is boiled in a boiling pot for <=30min pref. 10-15min to obtain boiled paste A containing a large amount of water. The boiled paste is put into a filtering vessel, e.g. a box-type vessel 1 having a metal net bottom 2 and lined with a filtering cloth 3. The paste is then covered with another filtering cloth 4, and left to stand for a definite time interval under a slight pressure to remove the excessive water from the boiled paste A. |
