Protein-based prods. in the form of heat-treated moulded articles contain 80-120 pts. wt. protein in the form of a protein-rich natural prod., 5-40 pts. wt. vegetable oil, 5-60 pts. wt. bran, 1-26 pts. wt. pectin and opt. other ingredients. The prods., e.g. in the form of flakes, puffed prods. tablets, etc. can be used in high-protein medical or slimming diets. They have a high fibre content, good flavour and storage stability, and stimulate gastro-intestinal function. Pref. prods. contain 65-75 wt.% of a protein-rich material with a protein content of 70-80% (esp. maize and/or soya protein), 5-12 wt.% of sunflower, soya and/or wheat-germ oil, 8-15 wt.% bran (esp. wheat bran), 0-15 (esp. 7) wt.% sucrose, 2-5 wt.% pectin (esp. apple pectin) and 1-2 wt.% of vitamins and minerals. Essential amino acids can also be added. The pref. maize:soya protein ratio is 2:1. |
