PURPOSE:A beverage containing enzymes is made acidic by adding an organic acid and pasteurized under pressure with carbon dioxide in a tightly sealed vessel, thus killing microorganism without deactivation of enzymes. CONSTITUTION:An aqueous solution beverage containing enzymes is mixed with an organic acid such as cirtic or tartaric acid to adjust the pH preferably to lower than 4.5, bottled, pressurized with carbon dioxide, tightly stopped and pasteurized at a low temperature of 49-66 deg.C. |
